Santa Luz Farm is located four kilometres north-east of El Tuma in the Department of Matagalpa. The farm covers 158 hectares, 85 of which are currently dedicated to coffee, with a further 30 suitable for production. The rest is mainly dedicated to beautiful woodlands.

Specially selected cherries harvested in the middle of the crop are dried with the mucilage – also called honey – still attached to the parchment skins. These are called “Miel de la Bastilla” - Honey of the Bastielle - referring to the longer red honey process, where these cherries are dried slowly in the shade.
